Widely used in Neapolitan cuisine, friarielli, also called broccoletti in Rome and cime di rapa in Puglia, are the newly developed buds of the rapini plant. We blanch buds, leaves and thin stems then sauté them all in oil and garlic to bring out the nutty flavour.
